This ancient Tyrolean dish, once the daily bread of the poor, represents the epitome of tradition in the heart of Europe: the Knödel universe, in fact, extends from South Tyrol across the Alps and throughout the former territory of the Habsburg Monarchy – every variation of the dish a planet unto itself.
